You Will Need:
Cucumber, 2 small
Lemongrass, 2 stalks
Cilantro, 2 Tbs, minced
Juice of 1 lime
Zest of ½ lime
Salt/Pepper, to taste
1. Peel, seed and small dice the cucumber.
2. Thinly dice the lemongrass.
3. In a bowl,combine the cucumber and lemongrass with the cilantro, lime juice and zest and seson with salt and pepper.
4. Place in an airtight contanier and let chill for 15 minutes prior to serving.
*Goes great on grilled fish like tuna and tilapia.
